Diego is no stranger to exceptional coffee. A long-time barista competition standout, he has been crowned Colombia’s best multiple times and most recently took home the 2021 World Barista Championship title in Milan. Alongside his wife Derlin, and with the support of her parents, Elias Roa and Bellani Sanchez, Diego has established Finca Diamante. Here, he brings his deep competition knowledge back to the farm, focusing on quality, innovation and expressive flavour from seed to cup.
Finca Diamante is planted primarily with Colombia and Castillo, with exotic varietals such as Pink Bourbon, Wush Wush and SL28 steadily expanding across the farm. Diego’s processing approach reflects his pursuit of complexity and clarity. Cherries undergo 48 hours of whole-cherry fermentation in sealed plastic tanks before being depulped and fermented for a further 60 hours. Drying takes place slowly in a marquesina for 15–20 days, allowing sugars and aromatics to fully develop.
