Colombia Luis Anibal Papayo
Pavlova sweetness with raspberry and kiwifruit; smooth, creamy texture and bright, refreshing acidity throughout. Colombia Luis Anibal Papayo is a fruity and intriguing coffee.
Luis Aníbal Calderón is one of Colombia’s most admired producers, known for his dedication, innovation, and over 40 years of experience in coffee. Based at Finca Villa Betulia in Acevedo, Huila, Luis faced near-collapse in 2011 when low market prices threatened his farm. Refusing to give up, he turned toward specialty coffee — a decision that reshaped his life and career. By 2015, he had transformed his entire farm into a collection of exotic varietals, including Gesha, Pink Bourbon, Sidra, and Papayo, establishing Villa Betulia as a benchmark for quality in Huila.
For this lot, Luis and his team handpick only the ripest cherries, which undergo a 45-hour aerobic fermentation before being slowly dried on parabolic dryers atop his home. This careful process develops a cup that’s intensely fruity, sweet, and full-bodied. We first cupped this coffee in Colombia earlier this year — and couldn’t wait to share it.

PRICING EXPLAINED
*This is the FOB (Free On Board) price: the price paid to the exporter before shipping, and which does not include shipping costs, weight loss (around 17%), storage and other charges. Ultimately, the FOB price represents the $ figure that stays in the coffee's country of origin, benefiting its producer, community, and beyond.
^This is the 'raw' price paid directly to the producer, and paid in the local currency for parchment coffee. The coffee is then milled and sorted before being placed in bags, ready for shipping.
